Caesar Salad

Crisp and refreshing summer Caesar Salad

Ingredients:

2 Hearts of Romaine lettuce

1 clove garlic

juice of 1/2 lemon

2 anchovies

1 tablespoon worchestshire sauce

1 tablespoon balsamic vinegar

1 tablespoon dijon mustard

1/2 cup parmesan cheese

1/3 cup olive oil

croutons (optional)

Peel and chop garlic clove. On a cutting board, take garlic and anchovies and make a paste by adding a small amount of salt and with the back of your knife start pressing until it forms a paste. Add to a large bowl. Add worchestshire sauce, vinegar, lemon juice, mustard and cheese. With a fork, mix together and stream in the olive oil until dressing is combined. Add cleaned lettuce and croutons and toss until lettuce is covered with dressing. You can also add in chicken, steak or even fish! Delicious summer meal.

Mini Turkey Meatloafs

This is a hit at Pot Luck dinners. A comforting recipe.

Ingedients

2 lbs. lean ground turkey

1 cup seasoned bread crumbs

1 small onion

1 clove garlic

1 tsp worchestshire sauce

1 tbs ketchup

1 tsp deli mustard

1 tsp salt

1/2 tsp pepper

Mix all ingedients together in a bowl. Form small oval shapes about 3 inches long and place on baking sheet. Squeeze a small amount of ketchup on each one and spread. Put in a 350 degree oven for 30 minutes.

Garlic Smashed Cheesy Potatoes

Best Mashed Potatoes I have ever had!

Ingedients:

2 pounds starchy potatoes (peeled)

3 large cloves garlic, minced

2 tablespoons butter (unsalted)

1/2 cup half and half

1/4 cup sour cream

salt and pepper

Romano Cheese

Cut potatoes into 1/2 inch think pieces and cover with cold water. Cook to boil and turn on medium heat and boil potatoes for 10-15 minutes until fork comes out clean. Drain potatoes in collander and sest aside. Put pot back on stove on medium heat. Melt butter, add minced garlic and cook for one minute or until garlic turns a light brown. Add half and half, sour cream, salt and pepper to taste. Add cooked potatoes back in pot and mash until smooth. Add about 1/2 cup of romano cheese and fold into potatoes.

Quick and Easy Poultry Pan Gravy

This is a quick, easy and tasty gravy for all poultry dishes.

Ingedients:

2 tablespoons olive oil

2 tablespoons flour

1 small onion or medium shallot

1 clove garlic

chopped fresh thyme leaves

1 1/2 cups (or 12 oz can) of chicken stock

Dash of salt and pepper to taste

Heat oil in skillet and finely mince onion and garlic. Add onion, garlic and a pinch of salt to pan and cook until soft. Sprinkle in flour and cook for one minute to cook flour. Add chicken stock slowly while stirring. when it comes to a bubble, turn off stove and add chopped fresh thyme leaves and salt and pepper to taste.

A variation with flare: Add juice of 1/2 lemon and dijon mustard for a zing!

Basic Marinara

Who doesn’t love pasta and marinara sauce. This is one of my staple recipes that I use in many italian pasta dishes. A great family favorite!

Ingedients:

1 tablespoon olive oil

1 medium sweet onion

4-6 cloves of fresh garlic

1/2 tsp of dried oregano

1 small can of tomato paste

2 large cans of crushed tomatoes

1/2 cup water

couple dashes of hot sauce up to 1 tsp (depends on your taste for spicy food)

1/4 tsp sugar

Heat oil in pot. Add onions and cook for a minute or so. Add garlic and saute for another minute or so. Add can of tomato paste and stir. Add hot sauce, oregano and water and cook until it starts to bubble. Add sugar and stir. Add crushed tomatoes and stir. Cover with lid cracked open and simmer for one hour, stirring occasionally.

There are so many variations on this – the most popular is adding a can of beer or 1/2 cup of red wine before adding water. Future sauce recipes will include different variations, but this is the most simple and delicious to incorporate into other basic recipes.

I love the basic recipe with pasta and a sprinkle of parmesan or romano cheese….yummy!

KT’s Chicken Fabulous

My son loves this chicken dish – great for the family and entertaining!

Ingedients:

1 whole chicken cut up in 8 pieces (can also use 2 pounds boneless skinless breasts)

2 cloves fresh garlic

2 tablespoons dijon mustard

1 tablespoon Herbes de Provence

Juice of one lemon

1/4 cup extra virgin olive oil

1 tsp sea salt

1/2 tsp black pepper

Preheat oven to 375ยบ. Mince garlic until fine and combine with all other ingedients until chicken is well coated. Best if marinated for at least 30 minutes. Place chicken on baking sheet or pan and cook for one hour or until chicken is golden brown. It is delicous!
